Mars Bar Slice

Mars Bar Slice Cut[8]

A few people I know lately have been speaking about or making Mars Bar Slice.  I had never had the privilege of tasting Mars Bar Slice before so decided to give making it a go.  It is super easy and super quick, the perfect thing for kids parties – I will definitely be adding it to the food list for Maxie’s second birthday next February.

Ingredients:
3x 50 gram Mars Bars
80g butter
3 cups rice bubbles
200g milk chocolate

Method:
Line your slice tin with wax baking paper.
Melt Mars Bars with butter over a medium heat, stirring to combine.  Combine melted mix with rice bubbles.  Pour mixture into prepared tin and spread it out evenly.
Melt milk chocolate and pour over slice.  Let slice set in the fridge.  Remove slice from tin and cut into pieces.

Mars Bar Cupcakes: They are out of this world!

Mars Bar Cupcakes by Baking Makes Things Better

These were absolutely delicious!  To make them I adapted this muffin recipe, so that I got the wonderful taste of the brown sugar but a more “cup-cakey” texture.

Ingredients:
1 ¾ cups flour
½ cup brown sugar, firmly packed
⅓ cup sugar
½ teaspoon of salt
2 teaspoons baking powder
⅔ cup milk
2 eggs
150g butter, melted and cooled slightly
1 teaspoon vanilla essence
10 “fun sized” Mars Bars

Method:
In a large bowl mix together the flour, sugars, baking powder and the salt.
In a separate bowl mix together the milk, eggs, butter and vanilla.
Make a well in the centre of the dry ingredients and add the milk mixture.  Stir to combine.
Spoon the batter into prepared muffin pans, filling the casings just over half way, place ½ a fun sized Mars bar in the centre of each and then cover the Mars bar chunk with a spoonful of mixture.

Bake at 180˚C for 15-20 minutes or until the tops bounce back when touched and a skewer can be removed cleanly.
To decorate ice with a cream cheese icing and ⅓ of a fun sized Mars bar.

Baileys and Mars Bar Cheesecake

Baileys Cheesecake

Yummy yummy, cheesecake for my tummy! I think it’s pretty hard to go wrong with cheesecake, they’re always good.  This one definitely is, with its chunks of Mars Bar scattered throughout.

Whole cheesecake 
Serves 8

200g malt biscuits
125g butter, melted
2 x 60g Mars bars
1 ½ x 390g cans sweetened condensed milk
250g cream cheese
⅓ cup good commercial chocolate topping
¼ cup Baileys liqueur
1 tablespoon powdered gelatine
¼ cup hot water

Whizz the biscuits finely in a food processor.  Add the melted butter and spread on the base of a 20cm round spring-form tin.  Chill.
Chop the Mars Bar and place over the biscuit base.  Beat the condensed milk and cream cheese together until well mixed and light (about 8 minutes).  Reduce the beater speed and the chocolate topping and the Baileys.  Increase speed to mix well.
Dissolve the gelatine in the hot water.  Reduce the beater speed and slowly add the gelatine.
Pour the cheesecake mix over the base.  Refrigerate for at least 4 hours before serving.
