I like that Ashley improvised with whatever she had. I too improvised by using a can of peaches instead of mango. I have baked this morning and made 21 muffins. I have given 6 away to a friend, will freeze 6, and the rest my family will eat today. Also, I substituted pecans for walnuts and sprinkled ready made Greggs crumble topping on some of my muffins (I got my inspiration from your blueberry crumble muffins.
