Lunchbox Bakes – Banana Cranberry Cookies

Gluten, Egg and Sugar Free Cranberry Cookies

These cookies are a little weird; there’s no flour, oats act in place of the usual dry ingredients.  So, they are a bit gooey.  But yum.  Really yum.  Guess what, they are also gluten, egg and sugar free.  How brilliant is that?  They are like little breakfast in a cookie ball.  And, they are easy; a one bowl, chuck everything together and you are done deal.  I like them a lot.

Makes about 30 cookies.

3 medium ripe banana, mashed
⅓ cup butter, melted
2 cups uncooked gluten free oats
¼ cup milk
½ cup craisins (dried cranberries)
½ walnuts, chopped
1 teaspoon vanilla extract

Preheat the oven to 180°C.  Line a baking tray with baking paper.
Mix all the ingredients together in a bowl, then let the batter stand for 5 minutes.
Scoop out teaspoons of the dough onto the baking tray.  Bake for 15 – 20 minutes or until the cookies are lightly browned. Let stand for 5 minutes before transferring to a wire rack.

  1. These are so good! I have been sugar free for a while now and I have been trying to find tasty recipes with no added sugar. These are the best I have made by MILES! Thanks so much! x

    1. So glad you like them. I ate so many of them when I made them - they are too addictive. Just proves you don't need added sugar for something to taste good.

  2. Melissa just wanted to say thanks so much for sharing your recipe. It looks so good and healthy. What a great way to start the day - a couple of these with my favorite hot beverage i.e. mocha coffee. Wow!

    Isn't it great when you find such an easy recipe to make and that's also so rewarding in it's flavor?

    I found the same thing with my "Easy Chocolate Chip Cookie Recipe". It's not quite as easy as your but when tasted - OMG! It's only got 10 simple ingredients and when combined, well let me say that So many people love them.
